A new year is upon us, and like many of you I am resolving to live a healthier lifestyle. One of my favorite pastimes is to cook. My specialty is outdoor grilling, even in the middle of winter. I encourage you to give it a try by bundling up, grab your spatulas and tongs, get out there on the barbecue, and present your family with the flavors and feelings of summertime. At the end of my blog I will share one of my family’s favorites — the recipe for my Easy Outdoor Grilled Lemon Shrimp.

And now for my Easy Outdoor Grilled Lemon Shrimp recipe. I’m sharing it with you hoping that you enjoy a prosperous healthy and happy new year!


What you will need:

• Four long wooden skewers (soaked in water for about 30 minutes)

• 32 jumbo shrimp (which I defrost from the grocery store-bought “cleaned and easy peel” bag by soaking them in cool water for 30 minutes, and then pat dry)

• 1/2 a cup of fresh parsley chopped

• Salt-and-pepper to taste

• 1/4 cup of olive oil

• 4 tablespoons of fresh lemon juice and 4 extra wedges for serving

Push 8 shrimp onto each skewer, mix the rest of the ingredients together in a casserole dish and place the skewered shrimp in to marinate for 30 minutes. On your preheated outdoor grill, gently place the skewers down on medium to high heat for three minutes per side. Remove from grill and serve with a salad and some rice pilaf. Squeeze the extra lemon wedges onto the skewered shrimp and enjoy! Happy New Year.
